Caramalised Cauliflower Soup
A few years ago I went to a fancy restaurant with work. We were ordered the chefs choice menu, and the started was a caramelised cauliflower soup, not something I would normally order. I tried it, and decided straight away that I had to find a similar recipe and try it for myself. There is no way you would guess that it’s dairy free and totally healthy, it is so creamy and delicious. It is a regular now, so tasty! Bonus if it matters to you, it is low carb, and the addition of the vinegar, as well as making it delicious, helps with your blood sugar response.

I love these crackers! So simple to make and once you have the ingredients it’s actually super affordable, but full of nutrients. These seeds are also a great source of fibre, protein, healthy fats, folate, potassium, magnesium, calcium, iron and zinc, all things essential for a healthy running body. Top with some hummus, your favourite cheese, some avocado and tomato, or your favourite topping for a great snack or even a light meal.

Sundried Tomato Hummus
I love a good hummus! And I have recently been reminded how easy it is to make. And you get to make it exactly how you want it. Bonus! It’s great on crackers, in sandwiches or wraps, and even on a salad.
Chickpeas are awesome as a plant based source of protein, as well as fibre, iron, vitamin B6 and magnesium. Plain hummus is great but how good are sun-dried tomatoes!! Definitely takes the flavour to the next level.
Warm Vietnamese Chicken Salad
I love travelling, and especially in South East Asia. Vietnam is one of my favourites for fresh flavours that leave you feeling great after you eat them! Amazing warm the day you make it, but just as tasty cold the following day if you have any leftovers. Vegan/vegetarian options swapping out the chicken with tofu and the fish sauce with soy sauce or tamari is just as good!
Vegan chilli
This chilli is an absolute favourite in my house. I double the recipe and make a massive slow cooker full and freeze it in meal sized portions for another day. If you want to add some meat to it, fry up some mince to mix through it before serving. If you don’t have or don’t like some of the ingredients, feel free to remove them and replace with something else. I just work to fill my slow cooker using whatever is in season and affordable.
hearty chicken, vegetable & quinoa soup
This hearty soup is perfect on a cold day, and freezes easily, so if you have freezer space make a big batch and save some for another day. If you’re prepared ahead of time you can also put it in a slow cooker so it’s ready when you are. It’s also amazing as a vegan or vegetarian soup by omitting the chicken and swapping the stock to vegetable stock.
Beetroot salad
This beetroot salad is amazing any time of year, but especially in the warmer weather. It’s great with BBQ’d or grilled meats and some bread or potatoes, or even by itself.
