Almond and Apricot Muesli
If you look over the recipes on my website it’s pretty clear I love oats for breakfast. They’re an affordable way of filling yourself up and getting some nutrients in for the day ahead. I love a seedy nutty fruity muesli and this definitely fits the bill! An optional extra is to add some cocoa or cacao before toasting to make it chocolatey goodness. So yum!
Oaty pancakes
How good are pancakes for breakfast?!?! They’re definitely a special treat in our family. The sort of things we have for brunch on Christmas day or birthday weekends. This recipe has less highly processed ingredients and more unrefined foods within it, so you know you’re nourishing your body while you’re nourishing your soul, and feeding your relationships (if you’re willing to share!).
Blueberry overnight oats
These overnight oats are fantastic to make in bulk ahead of time. I’m all about trying to make life easier! I use old jam jars and peanut butter jars to make them in which is great for popping in your bag to take to work or when you go out early, and I find them the perfect size! Play around with the flavours that appeal to you and are in season or you can easily buy frozen.
